Brown Marbled

my mince pork had a "marbled layers" effect of pink & brown, is it safe to eat? i presumed it was safe as it had been in the freezer, but my mince turkey had the same problem too, tho i only noticed after it had been opened and put in a resealable zip lock bag and put in the fridge for a day. my friend said the mince turkey wasnt safe 2 tone... so i threw it away, but that was before i realised my pork was 2 tone too.. was the turkey safe to eat? was the pork? the only things they had in common was they both were delivered from online shopping & they were both mince...
so, whats up with my 2 tone meat? the brownish coloured meat had not been exposed to air previously so it wasnt oxidation..?
Unless the packages were airtight (think: cryovacuumed) then that's normal.....A lot of times that happens with beef, pork and turkey mince (to Americans reading this, in the UK (Great Britain) "mince" is the term for "ground") and it's nothing to worry about, UNLESS it doesn't pass the all important "sniff test"........My theory on this, if in doubt and it smells fine, just cook it very thoroughly, I've never had a problem with that method......Enjoy!!!
